No Fail Gravy

Our family loves gravy. It can turn the same old meal into something amazing! Just by changing up the spices or adding milk instead of water you can have a totally different flavor. When we tell people we make ours from scratch they are amazed and they are even more amazed when they see how easy it is to make.
NO FAIL GRAVY
Melt 1/4 cup butter in sauce pan.
Add 1/4 cup flour (unbleached white, wheat, sprouted wheat...). Stir to smooth paste (roux) Cook and stir for 5 minutes (this removes the raw taste of the flour). My dad always said the secret to a great sauce or gravy is to take the time to cook the flour.
Turn heat off and let pan cool for a few minutes. This is an important step. Reduces chance of clumping.
Add 3/4 cup water slowly and stir. Turn heat back on. Add another 3/4 cup cold water, broth or milk and stir constantly until boiling. Add Turkey drippings to your gravy to make it amazing!
Add salt and pepper to taste, reduce heat and simmer for 3 minutes.
P.S. almost any spices taste great in this gravy.
