Caramel apples are a big deal in my family but I wanted a better version that is healthier and tastes great too. These turned out amazing!
Ingredients:
2 cups sugar
1/4 cup honey
1/2 cup water
1/2 cup heavy cream
2 tbsp butter
1 tsp vanilla
6 apples
1) Make the Caramel
Insert sticks into stem end of apples.
Mix sugar, honey and water in sauce pan. Bring to a boil over med-high heat and stir ’til sugar dissolves. Do not stir after this point! Swirl pan intermittently till temperature reaches 320 degrees (about 8-10 minutes). Remove from heat and slowly whisk cream into a hot pan. Add butter and vanilla, stir and let it cool until cool enough to coat a spoon. It only takes 30 seconds to a minute to cool. Dip apples into caramel and let excess drip off into pan.
2) Thoroughly coat
Dip apples into hot caramel. tip pan to maximize apple coverage.
3) Place on cookie sheet
Put a piece of parchment paper on a cookie sheet and coat it with cooking spray. place dipped apples on tray. Store in refrigerator ’til solid and enjoy!
